Savoury snack muffins

When most people think of healthy protein snacks, they think protein bars. However, protein bars often contain high amounts of sugar and unnecessary hidden ingredients. Instead of wasting money, why not make your own high protein low carbohydrate savoury snack muffins? Easy to grab on-the-go.

Ingredients (makes 12)

  • 10 free-range eggs
  • 2 spring onions
  • 8 cherry tomatoes
  • 2 handfuls baby spinach
  • ~ 60g organic feta cheese
  • 7g fresh coriander
  • 1/2 tsp. cumin powder
  • Sea salt & black pepper to taste

Preheat the oven to 180℃. Wash and finely chop up the spring onion, cherry tomatoes, baby spinach and feta cheese and divide them into each muffin mould. Scramble the eggs in a bowl with a little water, salt, black pepper and cumin. Pour the scrambled eggs into each mould and place in the oven. Cook for around 10-15 minutes. Store in the fridge and eat as a snack.
