Rainbow salad in a jar

The UEFA discussion is currently everywhere on the internet, which inspired us to today's recipe. The theme of today's recipe: Colorful and non-conventional!
The topic is very close to our hearts, because we think that discrimination against a person or group of people based on sexual orientation, which may contradict the vision of another person, is disrespectful and out of place for us! Everyone should be allowed to decide for themselves what fulfills him/her in life. We do not want to stand in the way of this - on the contrary - we support the freedom and equality of every person. We want to set a sign for more tolerance, respect and diversity in sports.
With the rainbow salad in a jar you not only show solidarity, but also do something good for your body, because this salad is full of healthy nutrients. Plant-based proteins from the lentils, chickpeas and tofu (or feta), healthy fatty acids from the avocado and fortifying micronutrients from the vegetables. By filling the salad in a jar, it's ready-to-go and perfect for a healthy meal in between meals. Just give it a try!
Ingredients:
- 30 g canned lentils
- 30 g canned chickpeas
- 80 g cherry tomatoes (red and yellow)
- ½ red onion
- ½ ripe avocado
- 90 g tofu (or feta)
Dressing:
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- herb mixture (basil, thyme, rosemary)
- a little salt & pepper
- 1 tablespoon mustard
Preparation:
The preparation is super easy and goes in just a few minutes. First, cut the vegetables into small pieces so that they fit easily into your jar. Start layering the ingredients. First add the lentils and chickpeas, then the vegetables and avocado. If you want to use tofu for this recipe, cut it into small cubes and fry it with a little oil in a pan on medium-high heat. If you're using feta for this, cut it into cubes and add it right in.
Still mix the salad dressing and add it just before you plan to eat the rainbow salad, otherwise the salad will wilt.
