Pumpkin & coriander soup

The start of autumn has come and brought with it the cold weather! But don’t despair now there’s an excuse to make delicious heart-warming pumpkin soups!


  • 1 Pumpkin
  • Fresh coriander
  • 1 red onions
  • 1 garlic clove
  • Pinch of salt
  • Black pepper
  • Pumpkin seed oil
  • ½ tsp. cayenne pepper
  • 4 tbsp. natural yoghurt

Prepare the vegetables by chopping up the pumpkin and onion into large chunks. Using a large pot, cook the pumpkin and onion with some butter and cover the vegetables with water. Once the pumpkin is soft, allow it to cool down slightly. When cool, blend it up along with a garlic clove using a blender or hand blender until smooth. Place the mixture back into the pot and season with salt, pepper, cayenne pepper, yoghurt and cut up coriander. Dish up into a bowl and top with a drizzle of pumpkin seed oil and another small spoon of yoghurt. Enjoy!
