Homemade granola

Homemade is better and for good reason. Granola, although seriously tasty, is a ‘health food’ that is tricking all its consumers. Shop bought granola is more often than not loaded with sugar. Avoiding unnecessary sugar intake is easy when making your own meals and snacks from scratch and may just help you reach that race weight you are after.

  • 250g rolled oats
  • ½ cup coconut oil
  • ½ cup shredded coconut
  • 2 tbsp. cacao powder
  • ½ apple
  • 2 tbsp. honey
  • ½ tsp. salt
  • Boiling water

Preheat the oven to 200℃. Melt the coconut oil. Place the oats, cacao powder, coconut oil, shredded coconut, honey and salt into a bowl. Mix together using approximately ¼ cup boiling water to soak the oats slightly. Line an oven tray with baking paper. If you are satisfied with the taste, evenly spread the granola mixture onto the tray. Finely slice the apple into small chunks and scatter over the granola on the oven tray. Place in the oven for around 30 minutes and lower the heat to 180℃.

Once cool and ready to eat, add nuts and seeds, dried cranberries or raisins to the granola and enjoy with yoghurt or as a dry snack.
