Grilled fish with butter potatoes – Seawater Cubes collaboration

Start-ups supporting start-ups! A local start-up in Saarbrücken, Seawater Cubes, generously approached us to try their fresh fish! The fish are grown in clear sea water, antibiotic and medication free with zero trace of microplastics. Due to efficient biotechnology, the fish are not exposed to stress to guarantee the well-being of the animals and species-friendly breeding.

Their aim is to support farmers, restaurateurs and grocers into becoming self-sufficient fish farmers. As aquaculture experts, they have designed and structured the cubes into fully-automated recycled shipping containers. This provides customers with efficient and space saving aqua culture concepts, as well as contributing to the sustainability of our oceans. 

Alongside their concept, they offer a comprehensive consulting and services for operation training, maintenance and repairing of plants.

Ingredients:

For 1 fish

  • Sea bass (whole or filet) 
  • 1 garlic clove
  • ½ lemon
  • 1 chunk butter (~12g)
  • Sea salt

Butter potatoes

  • Box of baby potatoes
  • Butter
  • 1 garlic clove
  • Paprika
  • Black pepper
  • Sea salt

Rocket salad

  • Fresh rocket leaves
  • Coriander
  • ~70g feta cheese
  • Cherry tomatoes
  • 2 tbsp. mixed seeds
  • Virgin olive oil
  • Squeeze of ½ a lemon
  • Sea salt
  • Black pepper

Fire up the grill. Prepare the fish by washing it and ensuring it is clean inside and out. Stuff the fish with chunks of garlic, a slice of butter and some salt. Season the outside of the fish with salt and a squeeze of lemon. Wrap the fish in tinfoil (shiny side out). 

Before boiling the potatoes in a pot, prick each one with a fork and allow to cook until soft. Once cooked, finely chop the garlic and place it with the potatoes along with a chunk of butter, paprika powder, salt and black pepper. Mix together to ensure all potatoes are covered in sauce.

To prepare the salad, wash the rocket, slice the tomatoes and place all the salad ingredients into a big bowl. Crumble the feta cheese over the salad  and sprinkle mixed seeds over the top.

Once the fish is cooked, remove the bones, dish up and enjoy!
