Healthy quesadillas

With this delicious Mexican dish, you'll whip up a tasty, fiery quesadilla in just a short amount of time. Cheers to the quick dishes that are prepared in no time at all! And let's be honest - who wants to wash that mountain of dishes? Exactly, no one. A nice side effect. After all, the time is much better invested in a bike ride, because when the coach calls, you can not waste time! 😉
With such a simple yet delicious combo, you're providing your body with healthy proteins from the tofu and beans. The veggies will make sure you get some of your daily vitamin and mineral needs met. The whole grain wraps give you the energy you need to stay full for a long time, topped with a good dose of healthy fatty acids from the avocado in the guacamole.
Not only is this recipe great for whipping up something tasty on the fly, but it also makes a great weeknight meal: prepared quesadillas not only save valuable time, but taste just as delicious as freshly made.

Filling:
- 1 yellow onion
- 2 cloves of garlic
- 1 can of kidney beans
- 1 can of sweet corn
- 1 bell pepper
- ½ tsp. chili flakes (if you like it spicy)
- 2 tbsp. tomato paste
- 250 g tofu (or chicken/ground beef)
For the wraps:
- Whole wheat wraps
- Vegan cheese
- 1 avocado
Spice mix:
- 1 tsp sweet paprika
- 1 tsp salt
- 1 tsp cayenne powder
- ½ tsp pepper
- 1 tsp granulated onion

Preparation:
Chop onion and garlic into small cubes and sauté briefly in olive oil. Either cut tofu into small cubes or crumble with a fork until a ground meat-like texture is formed. Then add to the pan and fry over medium heat until golden brown and season with salt.
Add the peppers and sauté for 2 minutes until hot. Add tomato paste and the spice mixture, add the beans and the corn along with a little water and cook briefly. Transfer the filling to another bowl so that the pan is ready to use again. Place the wrap in the pan and top with cheese first, then the filling and cheese again. Place the 2nd wrap on top and press the quesadilla flat with a spatula. Fry the quesadilla over medium heat until the bottom wrap is golden brown. Turn the quesadilla so the top gets a nice brown as well. The quesadilla is done when the cheese has melted. Repeat the process with the remaining wraps and filling. Serve with your choice of dip (our tip: guacamole 😉). Et voilá!
