Earth Day - Vegan summer rolls

Today we bring a breath of fresh air! On the occasion of World Earth Day, we want to share with you a culinary treat and encourage you to consume less meat. It's a well-known fact that livestock farming is responsible for a large portion of greenhouse gases, further fueling climate change. This has huge consequences both for our environment and for us. For this reason, we offer you a delicious recipe that you can easily prepare and at the same time do something good for the environment.


  • 1 package (300 g) rice paper
  • 120 g glass noodles
  • 1-2 carrots
  • half of a cucumber
  • 1 bell pepper
  • 1 avocado
  • 120 g red cabbage
  • 180 g tofu
  • fresh herbs (cilantro, parsley, mint to taste)

Marinade for the tofu:

  • 3 tbsp. soy sauce
  • 2 tbsp. sweet and sour sauce
  • 1-2 tbsp. lemon juice
  • 1 tbsp. agave syrup

Peanut dip:

  • 3 tbsp. creamy peanut butter
  • 2 tbsp. soy sauce
  • 1 pressed clove of garlic
  • some fresh ginger 
  • 2 tbsp. sweet and sour sauce

Prepare the tofu by cutting it into long, not too thin strips and marinating it for half an hour. Then either fry the tofu in a pan over medium heat until golden brown, or bake in the oven at 180 °C for 30 min (turning several times in between).

When the tofu is done and the vegetables are cut into thin strips, you can take care of filling the summer rolls. Fill a shallow plate with warm water and let the rice paper soak briefly (30 seconds) and lay it out on another plate. Tip: moisten the plate you are preparing onto so that the rice paper does not stick to the plate.

Now you can put the rice paper on the plate. Start with the fresh herbs and gradually add the rest of the vegetables and the tofu at the end. 

When you are done with the topping, you can wrap the summer rolls. To do this, grab one side of the rice paper and fold it over the filling. Fold the ends on both sides over the filling and roll up tightly. Be careful not to break the roll. Now cut the roll into two pieces and place them on a serving plate. Repeat the process with the rest of the rice papers. Et voilá, the vegan summer rolls are ready!
