Blueberry pancakes

Once the session is over, of course you want to treat yourself to something delicious, especially on a weekend, because what fits better than blueberry pancakes on a Saturday or Sunday morning?
With this recipe you sweeten your weekend and at the same time fill up your energy storages to start strengthened in the next session or recover well.

Ingredients:
- 125 g flour
- 2 tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
- 240 ml almond milk
- 1 tbsp apple cider vinegar
- 1 tsp vanilla
- maple syrup, to serve

Preparation:
Add flour, sugar, baking powder and salt to a bowl and stir everything. Add almond milk, apple cider vinegar and vanilla to another bowl and mix everything. Add the liquid ingredients to the dry ingredients and whisk until the dough is mixed. Let the batter rest for 5 minutes. Pour a bit of the batter onto a non-stick pan over medium heat. When the top starts to bubble, flip the pancake and bake until golden brown. Do the same with the remaining batter. Serve the pancakes warm and top with blueberries and maple syrup.
