From the naturally gluten-free oats packed with B vitamins, magnesium, zinc and iron to the walnuts providing protein and essential fatty acids, this vegan-friendly bircher muesli is a breakfast fit for champions. The slow-releasing energy from the easily digestible oats is perfect to fuel a big training day.
Ingredients for 1 large or 2 small portions:
1 cup fine oats (90g)
1 cup unsweetened oat milk
1 granny smith apple
1 heaped tsp. unsweetened peanut butter
½ tsp. cinnamon
Pinch of sea salt
1 tsp. honey
Place the oats, cinnamon and salt into a bowl along with the oat milk and mix together. Thereafter, grate the apple, chop up the dates, crush the walnuts and place it all into the bowl with the juice of half a lemon. Mix in the peanut butter until creamy. Leave to sit for a few minutes before serving. Once served, drizzle the honey over the top and enjoy!
