Needing an energy-rich snack to keep you fuelled on long rides? Then banana bread is your best friend. Bananas are a relatively high sugar fruit making them a great source of fuel.
They also contain micronutrients such as potassium and magnesium that are needed for energy production and to support the demands of exercise such as electrolyte loss through sweat. So the next time you have a long day in the saddle, wrap a few slices in cling wrap and pop them in your jersey pocket.
- 2 1/2 medium bananas (very ripe)
- 1 1/2 cup whole wheat or
speltflour (gluten-free version)
- 2 eggs
- 1 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. vanilla extract powder (optional)
- 3 tbsp. mixed seeds (other nuts like almonds, walnuts or pecans work too)
- 1 cup oat milk
- For more sweetness use 1-2 tbsp. honey
Preheat the oven to 180°C. Mash the bananas with a fork in a large bowl. Start by mixing the flour into the mashed bananas. Once a dough has formed, add and mix in the remaining ingredients into the dough. Mix until you have a good consistency & place the mixture into a bread mold that has been lined with baking paper. Place in the oven at 180°C for ~30 min.
